Egg and Cheese Easter Brunch Cups

Easter prep with The Dairy Alliance never looked so good. I made these delicious brunch cups that are perfect for your Sunday soiree and are effortless to make! For the cups, I started with placing little puff pastry squares in a muffin tin, then layered with a creamy, homemade cheese sauce, then cracked an egg into each cup, and sprinkled some ham to top it all off! I used real cheese, butter and milk for many reasons. The main being, IT TASTES BETTER and it has more protein than the leading plant based milks. The Recipe

This recipe makes 12 egg and cheese brunch cups. All you have to do is change the number of eggs and puff pastry squares in the recipe if you want to make a different amount! Easy peasy.

Ingredients

  • 1/4 stick of butter

  • 2 tablespoons all purpose flour

  • 1 cup milk

  • 3/4 cup shredded Swiss cheese

  • 1/4 teaspoon salt

  • About 2 sheets puff pastry

  • 12 eggs (1 egg per brunch cup)

  • Spiral sliced ham, diced

  • 1 beaten egg (for optional egg wash)

  • Chopped fresh chives, salt, and pepper

Instructions

First, you’ll want to preheat the oven to 375 degrees!

For the Cheese Sauce: Melt the butter in a saucepan over medium heat, adding in the flour and whisking to combine the two. Little by little, pour in the milk, whisking it after each addition. Continue whisking until the mixture thickens, then take the saucepan off the heat and stir in the swiss cheese. Season a little bit with salt (totally up to your taste!) and set aside.

For the Brunch Cups: Roll out the puff pastry sheets with a rolling pin (if needed!) until the layer is thin. Cut the pastry sheets into 12 equal squares (or for however many brunch cups you wish to make!). Oil the pan and line each cup of the muffin tin with one puff pastry square, and press it firmly to the bottom and sides of the pan. Make sure you leave enough room for the edges to come over the top of the muffin tin! Now, you’ll fill each cup with a spoonful of the cheese sauce. Then, carefully crack one egg into each cup and sprinkle diced ham on top of each egg. If you wish, brush the exposed edges of the puff pastry with a little egg wash!

Now, to bake!

Bake for 12-17 minutes, or until the eggs are completely set. This will depend entirely upon your own oven, so be sure to watch carefully! Then sprinkle the cups with chopped chives and a dash of salt and pepper.
